Adobe Photoshop Lightroom is for professionals and photo enthusiasts as the first part of your digital photo post-processing, with excellent Camera RAW and JPEG support. Should you need it, there are ties back into Photoshop CS5 when your artistic side is pushing you to do more tweaking to that art of yours.
Nik Software Color Efex Pro
Nik Software Color Efex Pro 3 for getting special effects and touch-ups without a lot of hassle. Viveza 2 for simple color and light changes.
x-rite ColorMunki Photo X-Rite ColorMunki Photo is what Da Guy uses to keep his PC monitor and printer colors look just like the real thing.

Books are a great way to learn about these tools, and Da Guy tends to consume them as he explores new interests. If you are a visual-learning kinda person and want the next best thing to a live instructor, try one of the online or DVD-based training series in the market today. Prices and quality vary widely, so shop around.

NAPP For Photoshop diehards, consider joining NAPP - National Association of Photoshop Professionals that not only gets you a subscription to Photoshop User Magazine, but access to the members-only section of the website with hundreds of training videos, hints, tips, forums, special events, podcasts, discounts, great training DVDs, and more. There are some terrific instructors such as Matt Kloskowski, Dave Cross, and Scott Kelby who hang out here. Check out the website for all the info. It's where Da Guy looks first for his multimedia training needs these days.

Raw without FUD If you're a digital photographer and either not sure about shooting in RAW or could use technical background, hints and workflow advice using your RAW files with Adobe CS5 or Lightroom, you should check out this DVD set. From the same guy that brings us the Whibal and Archive Creator that THIS guy uses as well.
